- Ingredients
- 500g/1lb new potatoes
- Fresh herbs to garnish
- 6 tablespoons hazelnut oil
- 1 teaspoon wholegrain mustard
- 3 tablespoons cider vinegar
- 1 teaspoon caster sugar
- few basil leaves torn into shreds
- salt and pepper
- Method - dressing
- Whisk hazelnut oil, cider vinegar, mustard, sugar and basil leaves together in a small jug or bowl
- Season
- Method - potatoes
- Cook the potatoes in lightly salted boiling water until just tender
- Drain well and leave to cool for 5 minutes, then add dressing
- Serve garnished with fresh herbs
