Guacamole

  • Serves: 4 - 6

  • Preparation time: 10 min

  • Ingredients

  • 1 small onion
  • 1 tomato
  • salt and pepper
  • 1 small hot chilli pepper
  • 2 well ripened avocados
  • 1 tbsp lemon juice
  • 2 sprigs fresh coriander (25 leaves)

  • Method

  • Peel the onion and the chilli and cut into pieces.
  • Wash and pick off the coriander leaves.
  • Place in a blender and blend for 40 seconds.
  • Peel, and remove the stones from the avocados.
  • Skin and seed the tomato, cut into pieces and put into the blender, with the flesh of the avocados and the lemon juice.
  • Add salt and pepper and blend for a further 40 seconds.
