Shortbread (microwave)

  • Ingredients
  • 4oz (100g) butter
  • 2oz (50g) castor sugar or soft brown sugar
  • 5oz (150g) plain flour
  • 1oz (25g) semolina or ground rice

  • Method
  • Cream butter and sugar, gradually work in the flour and semolina or ground rice with a fork
  • Knead well
  • Roll out until 1cm thick
  • Cut into 6cm rounds and prick with fork
  • Place on a greased baking sheet
  • Heat fo 2-3 minutes on high
  • Cut into wedges and cool
