Easy Chocolate Mousse

  • Serves: 6

  • Preparation time: 20 min
  • Chilling time: 2 hrs

  • Ingredients

  • 7 oz (200g) plain chocolate, broken into pieces
  • 1 oz (25g) butter, melted
  • 3 tbsp orange flavoured liqueur, brandy or rum
  • quarter pint (150ml) double cream
  • 3 egg whites
  • 2 tbsp caster sugar
  • cocoa powder, for dusting

  • Method

  • Melt the chocolate, then stir in the butter and liqueur/brandy/rum.
  • Stir gently until smooth.
  • Lightly whip the cream.
  • Whisk the egg whites in a separate bowl until they form stiff peaks, whisk in the sugar.
  • Fold the cream, then the egg whites into the melted chocolate mixture, using a metal spoon.
  • Turn the mousse into six small dishes or glasses and chill for at least 2 hours until set.
  • Before serving, dust with cocoa powder.
