Ratatouille

  • Ingredients

  • 1 dessert spoon of oil
  • 2 large onions, peeled and chopped
  • 4 cloves of garlic, peeled and chopped
  • 3 red peppers, washed and de-seeded and chopped
  • 3 courgettes, washed and chopped
  • 500g very ripe tomatoes or 1 tin (400g)
  • 2 aubergines, washed and diced (optional)

  • Method

  • In a large pan heat the oil and then add the onions and garlic. These should be cooked until soft
  • Add the rest of the ingredients and bring to the boil
  • Simmer for about 40 mins
  • Add any herbs and flavourings
