Ratatouille
- Ingredients
- 1 dessert spoon of oil
- 2 large onions, peeled and chopped
- 4 cloves of garlic, peeled and chopped
- 3 red peppers, washed and de-seeded and chopped
- 3 courgettes, washed and chopped
- 500g very ripe tomatoes or 1 tin (400g)
- 2 aubergines, washed and diced (optional)
- Method
- In a large pan heat the oil and then add the onions and garlic. These should be cooked until soft
- Add the rest of the ingredients and bring to the boil
- Simmer for about 40 mins
- Add any herbs and flavourings
