Ingredients 8 oz (225g) sugar 6 tbsp golden syrup 7 oz (200g) unsalted peanuts, skinned ¼ oz (7g) butter ½ tsp vanilla essence 1 tsp baking powder vegetable oil for greasing
Method Brush a 33 x 23 cm/13 x 9 inch shallow baking tin thoroughly with oil. Place the sugar and syrup in a large heatproof bowl. Mix well and cook in a microwave on high for 4 minutes. Add the peanuts and stir well to blend. Cook on high for 4 - 5 minutes or until light brown. Add the butter and vanilla, mix well and microwave on high for a further 1 - 2 minutes. Add the baking powder and gently stir until light and foamy. Pour into the prepared tin to form a thin, even layer. Leave to cool for 30 minutes, then mark into squares with a sharp knife. Leave to cool completely, then tip out of the tin and break into squares. Store in an airtight container until required.
