- Ingredients
- 5 oz (150g) butter
- 5 oz (150g) plain flour
- 1 egg yolk
- half tsp bicarbonate of soda
- 2 oz (50g) ground almonds
- 2 oz (50g) oats
- 2 oz (50g) dried cranberries
- 4 oz (100g) light brown sugar
- 4 oz (100g) white chocolate, chopped into small pieces
- Method
- Pre-heat the oven to 180 c/gas mark 4.
- Melt the butter and whisk in the egg yolk.
- Put the dry ingredients in a bowl and add the egg/butter mixture, mix well.
- Form the mixture into walnut sized balls.
- Place on a baking tray leaving a good gap between each ball.
- Flatten balls slightly with the back of a fork.
- Bake in the oven for 10 - 12 minutes.
- Allow to cool before removing from the tray.
