White Chocolate and Cranberry Cookies

  • Preparation time: 10 min
  • Cooking time: 12 min

  • Ingredients
  • 5 oz (150g) butter
  • 5 oz (150g) plain flour
  • 1 egg yolk
  • half tsp bicarbonate of soda
  • 2 oz (50g) ground almonds
  • 2 oz (50g) oats
  • 2 oz (50g) dried cranberries
  • 4 oz (100g) light brown sugar
  • 4 oz (100g) white chocolate, chopped into small pieces

  • Method
  • Pre-heat the oven to 180 c/gas mark 4.
  • Melt the butter and whisk in the egg yolk.
  • Put the dry ingredients in a bowl and add the egg/butter mixture, mix well.
  • Form the mixture into walnut sized balls.
  • Place on a baking tray leaving a good gap between each ball.
  • Flatten balls slightly with the back of a fork.
  • Bake in the oven for 10 - 12 minutes.
  • Allow to cool before removing from the tray.
