Shortbread (microwave)
- Ingredients
- 4oz (100g) butter
- 2oz (50g) castor sugar or soft brown sugar
- 5oz (150g) plain flour
- 1oz (25g) semolina or ground rice
- Method
- Cream butter and sugar, gradually work in the flour and semolina or ground rice with a fork
- Knead well
- Roll out until 1cm thick
- Cut into 6cm rounds and prick with fork
- Place on a greased baking sheet
- Heat fo 2-3 minutes on high
- Cut into wedges and cool
