Red Lentil Soup

  • Ingredients
  • 2 Cups of dry red lentils
  • 4 Cups of water
  • 100ml of Vegetable stock
  • 2 tbsp BBQ Sauce
  • 1 tbsp Cajun Spice2
  • Diced potatoes
  • 4 Carrots
  • 1 Tomato
  • Cornflour to thicken

  • Method
  • Boil the water and add the lentils, potatoes, carrots, spices and vegetable stock
  • Boil uncovered for 5 mins
  • Add the cornflour to thicken as desired
  • Reduce heat, cover and cook for 20 mins
  • Blend all the ingredients
  • Add all the other vegetables, BBQ sauce
  • Stir and cook for a further 5 mins
