Red Lentil Soup
- Ingredients
- 2 Cups of dry red lentils
- 4 Cups of water
- 100ml of Vegetable stock
- 2 tbsp BBQ Sauce
- 1 tbsp Cajun Spice2
- Diced potatoes
- 4 Carrots
- 1 Tomato
- Cornflour to thicken
- Method
- Boil the water and add the lentils, potatoes, carrots, spices and vegetable stock
- Boil uncovered for 5 mins
- Add the cornflour to thicken as desired
- Reduce heat, cover and cook for 20 mins
- Blend all the ingredients
- Add all the other vegetables, BBQ sauce
- Stir and cook for a further 5 mins
